Last Saturday afternoon, Edwin and I braced the bad weather and headed to Trece Martirez City where a banquet awaited us. Our destination was Republic of Cavite, a four-storey restaurant and occasions venue that celebrates Cavite cuisine and history.
Republic of Cavite breathes and speaks of history. For one, the building of the restaurant is a replica of Gen. Emilio Aguinaldo's house in Kawit, Cavite where he declared Philippine Independence in 1898.
The sections of the restaurant were named after historical figures and backgrounds, too. This we learned after taking a short tour of the building.
The Sala de Gobernador (Seat of Supremacy) is a function room located at the uppermost section of the building, emulating the room where meetings of Aguinaldo and other revolutionaries were held in secrecy. There are also the Magdalo Function Hall (named after Magdalo, the name Katipunan's provincial council in Cavite), the Plaza de Armas (scene of the momentous 13 Martyr's execution) and the Bulwagang Cuenca (where Gen. Aguinaldo once held office).

Not to be left out is the Munting Tagaytay which resembles the scenic Picnic Grove in Tagaytay and the Republic of Cavite restaurant proper which is a spacious dining hall at the basement of the building, overlooking the Munting Tagaytay.

The restaurant also has an outdoor venue that's perfect for a garden wedding. It's spacious and breezy, accentuated by a gazebo, a hanging garden and a fountain to complete the ambiance.
The sales coordinator of Town's Delight the Caterer gave a short talk about the catering services they offer and the origins of their sister company Republic of Cavite. The tour followed after that.
The food tasting had been quite a challenge for us because of the variety and richness of the food served. There were soup, salads, a couple of main courses and various mouth-watering desserts. Nevertheless, we enjoyed eating and appreciated our host's generosity.
